【摘要】:Theenergyinputratetestisusedtoconfirmthattheoverfiredbroilerisoperatingproperlypriortofurthertesting.Temperatureuniformityofthebroilercavitymaybeusedbyfoodserviceoperatorstoselectanoverfiredbroilerwiththedesiredtemperaturegradients.Preheatenergyandtimecanbeusefultofoodserviceoperatorstomanageenergydemandsandtoknowhowquicklytheoverfiredbroilercanbereadyforoperation.Idleenergyrateandpilotenergyratecanbeusedtoestimateenergyconsumptionduringnon-cookingperiods.Cookingenergyefficiencyisapreciseindicatorofoverfiredbroilerenergyperformancewhilecookingatypicalfoodproductundervariousloadingconditions.Ifenergyperformanceinformationisdesiredusingafoodproductotherthanthespecifiedtestfood,thetestmethodcouldbeadaptedandapplied.Energyperformanceinformationallowsanendusertobetterunderstandtheoperatingcharacteristicsofanoverfiredbroiler.Productioncapacitycanhelpanendusertobetterunderstandtheproductioncapabilitiesofanoverfiredbroilerasitisusedtocookatypicalfoodproduct,helpingwithspecificationofthepropersizeandquantityofequipment.Ifproductioninformationisdesiredusingafoodproductotherthanthespecifiedtestfood,thetestmethodcouldbeadaptedandapplied.1.1Thistestmethodevaluatestheenergyconsumptionandcookingperformanceofoverfiredbroilers.Thefoodserviceoperatorcanusethisevaluationtoselectanoverfiredbroilerandunderstanditsperformanceandenergyconsumption.1.2Thistestmethodisapplicabletogasandelectricuprightoverfiredbroilershavinginputratesgreaterthan60,000Btu/h(gasoverfiredbroilers)or10kW(electricoverfiredbroilers).1.3Theoverfiredbroilercanbeevaluatedwithrespecttothefollowing(whereapplicable):1.3.1Energyinputrate(see10.2),1.3.2Temperatureuniformityofthebroilercavity(see10.3),1.3.3Preheatenergyconsumptionandtime(see10.4),1.3.4Pilotenergyrate(ifapplicable)(see10.5),1.3.5Idleenergyrate(see10.6),and1.3.6Cookingenergyefficiencyandproductioncapacity(see10.7).1.4Thevaluesstatedininch-poundunitsaretoberegardedasstandard.ThevaluesgiveninparenthesesaremathematicalconversionstoSIunitsthatareprovidedforinformationonlyandarenotconsideredstandard.1.5Thistestmethodmayinvolvehazardousmaterials,operations,andequipment.Thisstandarddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthisstandardtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
